Orange Ginger Chicken wings

I Kg chicken wings jointed

For Sauce

1 Orange zest and juice

1.5" piece gingeroot grated

2 Tbsp soy sauce

1 Tbsp honey

Method

Heat oven to 400. Line a baking tray with foil and place a cooling rack over it and spray with oil. Arrange chicken wings in a single layer over rack. Bake 20 minutes. Remove from oven turn over and bake another 20 minutes. Next remove chicken and place in a glass baking dish in a single layer. Blend sauce ingredients together in a jar and pour over chicken wings. Bake 10 minutes. Remove from oven turn over chicken wings and bake an additional 10 minutes. Serve garnished with finely sliced green onions. Yield 25 chicken wing pieces.

Mint Pesto

Process together 1 bunch mint leaves with 1/4 cup walnuts, 1/4 cup olive oil, 1/4 cup parmesan cheese and 1 clove garlic with some salt till smooth and creamy. Yields 1 cup.

Roast leg of lamb

Ingredients

1 leg of lamb

5 sprigs rosemary

5 cloves garlic

rind and juice of 2 lemons

peppercorns 1 tbsp

salt

Method

Grind the last 5 ingredients to a paste in a food processer with a splash of olive oil. Score lamb leg in a criss cross pattern and add marinade. Marinate 24 hours in refrigerator. Bake at 450 for half an hour and at 350 for 20 minutes per pound of lamb. Remove from oven and let rest for 20 minutes covered with foil. Carve and serve with mint pesto. (recipe to follow)

Ginger miso dressing/marinade/sauce

1/2 cup miso

2" piece ginger root grated

1/2 cup mirin

Dressing:

Mix above ingredients till blended and blend together with sesame oil.

Marinade:

Mix above ingredients till blended. Add a large splash of soya sauce and sesame oil.

Spicy Indian Mutton Curry

Ingredients

1 Kg stewing goat meat

1 large onion

1 28oz can diced tomatoes

2" piece ginger root

Spice mix

1 cinnamon stick

2 star anise

Method

Heat a little oil in a dutch oven. Brown goat meat with 1 tsp turmeric sprinkled on it. Add sliced onion, finely grated gingeroot and spice mix. After a couple of minutes add diced tomatoes, star anise and cinnamon stick whole. Cover with a lot of water and cook covered over low heat for 2-2.5 hours on the stove top. Alternatively once meat and onions are browned transfer to a slow cooker add tomatoes spices and cook covered on low setting for 8 hours. This could also be cooked in a pressure cooker according to manufacturers directions for cooking meat or in an oven at 350 s for 2-2.5 hours in an oven proof casserole. Add less water if using the alternative methods of cooking. Garnish with fresh mint and coriander leaves if desired.

Spice Mix

1 tbsp coriander seeds

1 tbsp cumin seeds

1/2 tbsp peppercorns

3 dried red chilies

Roast above ingrediets on a dry pan and grind to powder using a mortar and pestle or a spice grinder. Add salt to taste.
