Fried Plantains (variation)

Slice 2 plantains diagonally.

Heat saute pan over medium high and add 1 tbsp coconut oil.

Add sliced plantains and fry 2-3 minutes per side until golden.

Add sweet ginger syrup. 

Enjoy

Could substitute honey for ginger syrup.

Grilled Potatoes

Ingredients

6 large potatoes

2" by 2" by 1" cube feta cheese

Handful parsley

1 bunch spring onion (green tops only)

Method

Slice potatoes in 1/2 cm disks and place on a baking sheet lined with parchment.  Spray liberally with olive oil on both sides and bake 20 minutes. Meanwhile heat up grill pan and spray with oil. Grill potaoes till grill marks appear, aound 4 minutes per side. Place in serving dish and garnish with crumbled feta, minced parsley and chopped green onion tops. Enjoy. Serves 6.

Slow cooker pork shoulder

Place 3-4 pound pork shoulder in slow cooker fat side up. Pour 1 bottle tomato coulis,1/4 cup molasses, 1 large onion halved and salt. Cover and cook for 8-10 hours on low. 

Remove pork from slow cooker once coooked, remove fat layer and shred pork using 2 forks. Remove onion from sauce and retrn shredded pork to sauce. Serve over bun along with coleslaw.

Makes 10-12 servings

Fast Frosting

Melt 1 large chocolate bar (150gms) in microwave. Add 1/4 cup marmalade and stir till combined. Spread over cooled chocolate cake. Let it cool completely. Frosting will be sticky.

Home made herb cheese

Heat 1.3 liters milk (1 packet from 1 gallon bag) till very hot. Add 2 Tbsp vinegar, 1/2 tsp salt and turn off heat. Strain in a cheese cloth lined seive and add chopped fresh herbs. Keep the lined seive with the milk solids over a mixing bowl overnight in the fridge. Remove cheese cloth and serve cheese with crackers and smoked salmon. Discard liquid in bowl.
