Coconut curry popcorn shrimp

Ingredients

200 gms raw shrimp

1/3 cup all purpose flour

1 egg beaten

1/3 cup unsweetened dried coconut

1 Tbsp curry powder

salt

oil for shallow frying 2-4 Tbsp sunflower oil

Method

Heat oil in a skillet over medium heat. Set up a breading station with 3 bowls:1 flour, 2 beaten egg 3: dried coconut mixed with curry powder and salt. Dip each shrimp first in the flour, then onto beaten egg and third the coconut mixture. Put it onto hot oil  in the skillet and fry 2 minutes per side. Repeat breading and frying process till  all the shrimp are fried. Enjoy!

Pasta sauce with fennel seeds and lentils

Ingredients

1 Lb ground pork/beef

1 onion chopped

4 cloves garlic

1 liter tomato coulis

1.5 liters water

1 cup green lentils dried

1  Tbsp fennel seeds

1.5 tsp peppercorns

1 Tbsp dried basil

1 Tbsp tomato paste

2 Tbsp olive oil

Method

Brown meat in dutch oven. Add chopped onions and garlic cloves,minced. Add tomato paste and stir. Powder fennel seeds, peppercorns and basil. Add to meat mixture. Add tomato coulis, water, lentils, salt and simmer for 30 mintes. Adjust water amount till  desired thickness of sauce is acheived. Garnish with olive oil, extra virgin and serve over cooked pasta. Delicioso!

Oatmeal with Apples and honey

Ingredients:

1 cup oats

2 cups water

pinch salt

1 apple cored and chopped

1 Tbsp honey

Cinnamon to taste

12 chopped roasted almonds

Milk 1/4 cup or more

Method:

Cook oatmeal with water according to package instructions. Add chopped apple and honey, cinnamon and nuts. Enjoy this delicious dessert for breakfast. Makes 2-3 servings.

Rosemary marinade

Ingredients

1Tbsp dried rosemary

4 cloves garlic grated

2 Tbsp olive oil

salt and freshly ground black pepper

Method

Mix all ingredients togethef and pour over  1lb of meat..Marinate 24 hours. Grill meat to desired doneness  Enjoy

Dillicious cabbage soup

Ingredients:

1/2 head cabbage shredded

1 or 2 carrots chopped

1 large red onion chopped

5 cloves garlic chopped

8 cups water

3 large bouillon cubes

1 bunch fresh dill minced

1.5 tsp peppercorns powdered

salt to taste 

1 can kidney beans drained and rinsed

2 bay leaves

2Tbsp olive oil

Method

Heat olive oil in a large dutch oven. Saute chopped onion, carrots and garlic. Add shrreded cabbage and salt to taste. Add water boiullon cubes and bay leaves and beans. Simmer 15 minutes on low. Turn off heat add minced dill and ground pepper. Serve piping hot. Makes 10 servings.
