Kefir-Lime-Dill creamy dressing

Ingredients

1/3 cup plain Kefir

Juice of 1/2 lime

3 Tbsp Mayo

1Tbsp Dijon

2 tsps dried dill

Method

Whisk all ingredients together. Add salt and pepper to taste if needed. Pour over green salad and enjoy.

Plum and Cardamom Oatmeal

Ingrdients

1/2C Oats

pinch ground cardamom

1 cup water

cream/milk to taste

pinch salt

2 plums pitted and chopped

Method

In a microwaeable bowl add all ingredients except the milk/cream. Microwave on 50% power for 4 minutes. Let sit 1 minute and add milk/cream. Enjoy. Makes 1 delicious serving.

Smoked salmon topped scones

Ingredients

1C flour

1/4C cold butter cubed

2tsp baking powder

1/2tsp baking soda

1/2C buttermilk

1C grated cheese

3Tbsp chopped fresh dill

100g smoked salmon

Method:

In a large bowl, mix together the flour, baking powder and baking soda. Cut in cold butter using a pastry blender. When the mixture ressembles coarse peas add grated cheese and herbs. Add buttermilk and knead on a floured surface. Roll dough into a 1/2" thick circle. Cut into 1.5" circles using a cookie cutter. Place on a cookie sheet and bake in a preheated oven at 425F for 10 minutes. Let cool for 5 minutes. Serve topped with smoked salmon pieces. Sprinkle with dill. Makes approximately 30 pieces. Great for parties.

Cold buster chicken broth

Ingredients

1 boiling chicken

3" piece ginger washed and sliced

1 head garlic peeled

5 stalks celery

2 large carrots cut in 2

2 large onions peeled and halved

turmeric powder 1 tbsp

1/4 cup black peppercorns cracked

salt

water

Method

Add all ingredients to a large stock pot. Add enough water to cover the chicken. Bring to a boil. Simmer for 40 minutes. Add one lemon cut in half and a bunch of parsley and continue to simmer for 20 minutes. Remove the chicken and veggies. Transfer the liquid chicken broth to a second pot. Return the chicken and veggies to the stock pot and refill with half the amount of water and simmer for half an hour. Discard the chicken and veggies and add the broth to the second pot. Adjust seasoning (salt) to taste. Enjoy piping hot.
