Strawberry ice milk
1 cup chopped strawberries
1 tbsp honey
1 cup milk
1 cup ice
Method
Whiz strawberries and honey
in the blender. Once crushed, add milk and ice. Blitz for another minute or two.
Serves 1. Pour into a chilled glass. Garnish with a sprig of mint. Substitute almond, soy, oat or other milk to make it lactose free and vegan. Leave
out the honey to make it keto friendly. Enjoy!

Mango mascarpone mousse
1 cup chopped mangoes
4 tbsp mascarpone
Sugar to taste
Small pinch salt
Blend together in blender and serve.
Makes 3-4 servings.

Fresh Tomato sauce
2 large ripe tomatoes
2 cloves garlic
1 tsp Italian seasoning
1 tsp chili flakes
2 tbsp extra virgin olive oil
Salt to taste
Place a box grater over a shallow bowl. Grate the tomatoes one at a time. The peel will be left which can be discarded. Using the fine side of the grater, grate the garlic cloves. Powder the Italian seasoning
and chili flakes. Add to the bowl with tomatoes. Add olive oil. Serve over cooked pasta. Garnish with freshly grated cheese. Top with a sprig of basil.

Pizza Margarita
2 C flour
1 Tbsp yeast
1 tsp salt
3 Tbsp olive oil
1 C warm water
1 large ripe tomato
1garlic
clove
1 ball fresh mozzarella
Fresh basil leaves
Chili oil
Mix flour, salt and yeast add warm water and olive oil. Knead into a ball, coat with olive oil and let rest 1 hour.
After an hour, divide the dough into two. Roll one half into a 12" circle or rectangle. Grate the tomato, add salt and grated garlic and chopped basil. Drizzle chili oil and stir.
Heat oven to 450F. If using a pizza stone preheat
the stone in the oven. Once the oven has preheated, drizzle some chili oil over pizza crust. Spread the sauce over and top with mozzarella.
Cook on the stone or a baking sheet for 15-20 minutes on the lower rack of the oven. Garnish
with fresh basil leaves and enjoy. Delicioso!

Easy mini pavlova
12 meringues
1 cup creme fraiche
1 pint strawberries
Layer meringues with a dollop of creme fraiche and chopped strawberries. Alternatively,
whipped cream or greek yogurt can be used instead of the creme fraiche. Any berries of choice can be used instead of strawberries.
