1/3 cup cocoa powder
1 cup sugar
2tsp baking powder
1/2tsp salt
Method
Mix dry ingredients together in a small bowl. In a larger bowl mix wet ingredieuntas together with a whiak. Slowly add dry ingredients to wet ingredients while whisking. When blended pour into 2 dozen lined muffin cups or a greased and floured bundt pan. Bake at 375F for 15 to 20 minutes for cupcakess or 45 minutes for Bundt cake, until skewer inserted in cake commes out clean. Serve sprinkled with icing sugar.

2 cloves raw garlic grated/minced
1/8 cup Extra Virgin Olive Oil
Salt to taste
Method
Blend together all the above inrgedients in a food processor. Serve with Pita chips or crudites.

1 large shallot thinly sliced
1 Tbsp butter
salt, pepper, nutmeg grated, 1 tsp savory
Method
Preheat oven to 375. Butter and flour 5 ramekins . Heat butter in saute pan and add sliced shallot. After 2 minutes add squash, salt, pepper, nutmeg and savory. Cook covered 5-7 minutes til tender. Mash using potato masher. In a meduin mixing bowl add 1 can evapotated milk, cheeses and cooled mashed squash. Blend together using a whisk. Carefully fold in whipped egg whites. Pour into prepared ramekins and bake 15-20 minutes until done (test using cake tester, skewer). Remove from oven and serve immediately. Prep time 15 minutes, cook time 15 minutes, makes 5 servings. Enjoy along with green salad for a quick and easy delicious meal.

1 Tbsp honey
1 Tbsp oil
salt
shreded lettuce
Method
Heat oil in skillet. Add finely chopped onions and soften. Add chopped bell pepper and kidney beans. Add curry powder, salt, tomatoes and about a cup of water. Cook till peppers are tender. Add honey and stir till blended. Serve over cooked couscous, rice or polenta. Garnish with shredded lettuce. Enjoy. Serves 2-3. Prep time 5 minutes. cook time 10 minutes.

Ingredients
1 cup oats not instatnt
1/4 cup assorted dried fruits
handful walnuts and pumpkin seeds
1/4 tsp grated nutmeg
honey(optional)
milk/almond milk/ cream
Method
In a large bowl add oatmeal and all other ingredients except nuts. Add 2 cups walter a pinch of salt and microwave 12 minutes on 50% power. Add milk/almond milk or cream. Sprinkly with nuts. If desired sweeten with honey. Enjoy.
